Everything on this pizza came out of the ground, and it tastes like it.

• Tomato, cooked down to a bright, loose sauce.

• Mozzarella, melted into soft pockets.

• Roasted eggplant, silky and a little smoky.

• Zucchini and capsicum, sliced thin, charred at the edges.

• Onion, sweetened slowly until it stops biting.

No meat, no shortcuts. The vegetables go on in stages so nothing turns to mush, and the whole thing comes out of the oven with the crust blistered and the top still juicy. Order it as it is, or add nothing at all. It does not need it.
